~Cathy's Banana Cream Pie Recipe~

This morning I thought I would share a recipe for Banana Cream Pie.  My friend Cathy shared it with me, and for that I am so very thankful.   It is so yummy!  I made it a week or so ago.  This is the third time I have made this pie now.  Each time I have made it, I think how I need to share this wonderful recipe.   It is easy to make, and melt in your mouth goodness!
First, you make and bake a pie crust.  Next you make the filling.

In a sauce pan, mix all of these ingredients.  

2/3 cup of sugar
3 Tablespoons of Cornstarch
1 Tablespoon of flour
a pinch of salt
3 egg yolks
3 Cups of milk
1 teaspoon of vanilla
Banana Flavoring (wait to add this until the pudding has thickened.)

Turn the heat to medium and bring to just under a boil, stirring constantly.  Remove from heat and add about 2 teaspoons of banana flavor.  (You can add more or less based on your personal preference.)

Let cool.

Slice bananas into cooled pie shell.  Once puddding has cooled, add more chopped bananas to the pudding & pour into the pie shell.  Top with cool whip.  (You will need the big tub of cool whip, not the small.)

Of course you will need to keep this in the refrigerator.

    but I'd have to use whipped egg yokes, the old fashioned way, because my husband can not eat Cool Whip.

    Lovely to see someone who makes their own pie crust!!!!! I can't do it any other way, in my family!!! :-)
